Gỏi Trái Thơm

Pineapple Salad

1 cup pineapple chunks, fresh or canned
1 cup shredded carrot
1/2 red onion, thinly sliced
4 oz raw shrimp in shell
4 oz pork shoulder
2 T fresh lime juice
2 T fish sauce
1 T sugar
1/4 cup Vietnamese coriander leaves, shredded
1/2 T crisp fried shallot
1/2 T pounded roasted peanuts
