Đậu Ngọt Xào Bò

Snap Peas and Beef Stir-fry


2 cups sugar snap peas
1 piece beef filet
1 clove garlic, minced
1/2 T oyster sauce
Vegetable oil, soy sauce, fresh ground pepper


Snap the top of the sugar pea's pod off and pull down to remove the strings from both seams. Rinse peas throroughly.

Slice beef.

Heat some oil in a pan over medium high heat, add garlic and stir until fragrant, add beef and stir-fry until it turns color. Add a dash of soy sauce and pepper, stir. Add peas, oyster sauce, stir to cook for 2 minutes (It won't take long to cook snap peas). Season with some soy sauce to taste if desired, sprinkle some fresh ground pepper. Serve.

Cơm Bò Lúc Lắc

Shaking Beef Rice Dish


1 lb beef filet mignon or tenderloin
3 cloves garlic, minced
1 onion
3 cups cooked rice
1 T ketchup
Vegetable oil, butter, soy sauce, sugar, salt, pepper


Dice beef into small bite size, marinate with 2/3 minced garlic, 1/2 t sea salt, some thick soy sauce, sugar, pepper and oil.

Red Rice: Heat 1 T oil in a pan over medium high heat, add 1/3 minced garlic in and stir-fry until fragrant. Add cooked rice in and stir, add ketchup, mix evenly, season with soy sauce, sugar and pepper to taste.

Luk Lak Beef: Use a thick bottom pan, heat 1 T oil and some butter over high heat. When it's hot (but not smoking hot), add beef in, you can do 1/2 batch at a time. Make sure all the beef touch the bottom of the pan. Leave for 1-2 minutes until it's lightly burn. Turn or shake to cook all the sides, add onion to cook. Serve with red rice. Option: Some prefer to add 1/2 T oyster sauce in the beef when adding onion to serve with rice dish. Don't add oyster sauce when you serve this beef alone.

Bông Cải Xanh Xào Bò

Beef and Broccoli Stir-fry


2 medium crowns broccoli, cut into florettes
1/3-1/2 lb beef filet
2 big cloves garlic, minced
Vegetable oil, fish sauce, salt, sugar, pepper to taste.



Cut the beef across the grain into thin slices.
Cut broccoli florettes into good bites if they are still big. Wash them throroughly.

Boil 1/2 cup water and cook broccoli for 3-4 minutes. Drain and set aside.
If you want to make super green broccoli, you can do this but do it with caution because it's super hot and water might splash.
Heat a thick bottom pan over high heat while boiling a pot of water. When the pan is hot but not smoking hot, pour in boiling water and add broccoli. Broccoli will turn rich deep green as you've seen in (good) restaurant. Cook for 3-4 minutes.
Return the pan to heat, add 1 T oil, 1/2 garlic and cook until fragant. Add the beef, blanch them by letting them lay flat for 30 - 40 seconds, and then stirring to separate the pieces. Add fish sauce and pepper to taste and remove when it is nearly cooked (just turns color), about 1-2 minutes.
Add some more oil into pan and the remaining garlic, stir until fragant, add broccoli and sprinkle with salt and sugar, stir fry briefly. It should be tender but crisp. Add the beef back in. Dash some more fish sauce and sprinkle some black pepper to taste.

Sườn Bò Xào Hành

Boneless Galbi with Onion


1 cup of left over Korean BBQ (beef short rib), bones removed
1/2 onion, cut 1 inch apart
3 green onions, cut into 2-inches length
5-6 dried hot chili pepper (optional)
1/2 T vegetable oil


Heat oil over medium high heat, add onion, stir-fry until edges turn golden, add galbi (and dried hot chili pepper), stir to touch the hot bottom of the pan. Add green onions. Serve with steamed rice.

Bò Cuốn Nướng

Grilled Beef Wheels


1/2 lb flank-steak
1/4 white onion, thinly sliced
1 t minced lemongrass
1 ripe tomato, slice into 1-inch length
10 small okra, cut in half
1 green onion, chiffonade
1 T vegetable oil
salt and pepper
5 toothpicks


Butterfly the steak: holding the knife horizontally, slice the steak in half leaving 1 inch uncut. Open the steak, pound it until uniformly thick. Sprinkle with salt and pepper (and a pinch of fishsauce if desired), top with lemongrass and onion and roll tightly. Insert bamboo toothpicks through the roll's center at 1-inch intervals, cut into slices between the toothpicks.

Sprinkle tomatoes, okras with salt, pepper and oil.

Grill beef pinwheels about 5-7 minutes until well browned outside and still pink inside. Grill tomatoes and okras until soft about 3-5 minutes. Place the beef pinwheels on tomato slices, top with green onion.

Bò Lúc Lắc

Beef Luk Lak


1 lb beef chuck short ribs, cubed
1/2 onion, cubed
1 T oyster sauce
1 T maggie
2 t sugar
3 cloves garlic, minced
butter
fresh ground pepper


Combine oyster sauce, soy sauce, sugar, garlic, pepper in a bowl. Add beef and marinate in refrigerator for 45 minutes.
Heat butter in a pan over high flame, add onion and cook for 3 minutes, add beef and leave it to brown one side (3-5 mins) then stir to cook for couple more minutes. Ground some fresh pepper, serve immediatelỵ
