Đậu Hũ Hấp Tôm Khô

Steamed Tofu with Shallot Shrimp Oil


1/2 block House soft tofu
1/2 T shallot oil
1 T dried fine shrimp
1/2 T scallion oil
2/3 T light soy sauce
1/2 T sugar


Soak dried shrimps in water until soft, pound, and stir-fry with some oil and sugar.
Put soy sauce and sugar in a small sauce pan and bring to boil until sugar dissolved.
Cut tofu in half and lay flat in a bowl. Steam tofu until hot (for 5 minutes), or just microwave it until hot (1-2 minutes)
Pour sweet soy sauce into bowl, top tofu with shallot oil, fried dried shrimp, and scallion oil. Serve.

Đậu Hũ Sốt Tôm Cà

Fried Tofu in Tomato Shrimp Sauce

1 block medium firm tofu
10 shrimps, shelled and deveined, coarsely chopped
1 tomato, chopped
2 cloves garlic, minced
2 green onion, chopped
4 sprigs cilantro, chopped
1/2 T ketchup
1/2 t sriracha
Vegetable oil, fish sauce, sugar, pepper


Cut tofu into small cubes or any shape that desired. Deep fry until golden crisp. Set aside.
In a small sauce pan, heat some oil over medium high heat, add garlic and cook until fragant. Add tomato in, stir to mix well. Cover to cook for a few minutes. Add ketchup, sriracha and some water (if needed). Add shrimp and stir to cook until the shrimp turns pink. Add fish sauce, sugar and pepper to taste. Add green onion and cilantro. Stir to mix evenly. Pour over crisp fried tofu cubes, served.

Đậu Xào Tương Ngọt

Green Bean and Crisp-Fried Tofu in Hoisin Sauce


12 oz pre-washed green beans, cut in half
1 block medium firm tofu, cubed
3 shallots, chopped
1 clove garlic, chopped
1 T hoisin sauce
1 T soy sauce,1/2 T brown sugar, salt, pepper
vegetable oil


Deep fry tofu cubes until golden crisp, set aside.
In a large pan, heat 1 T oil and add shallot and garlic, cook until fragant. Add green beans, soy sauce, salt, sugar to taste, stir to cook for a minute then cover to cook for 3 more minutes or until nicely soft. Add tofu, hoisin sauce and stir well to cook for 2 more minutes. Sprinkle with fresh ground black pepper and serve.

Sườn Ram Đậu Hũ

Glazed Sparerib with Crisp Fried Tofu


2 lbs lean spareribs, cut into 2-inches pieces
16 pieces fried tofu (1/2 block firm tofu)
2 shallot, minced
2 cloves garlic, minced
1 T vegetable oil
1/3 cup white wine
2 T sugar
Fish sauce, salt, pepper to taste


Put spareribs + garlic + shallot + 2 T fish sauce + 1/2 t salt + 1 T sugar + fresh ground black pepper, mix well, cover and refrigerate overnight or 4 hrs.

Heat oil in a heavy bottom skillet. Add the ribs and cook until brown, about 15-20 minutes. Add sugar and stir for 10 minutes. Add table wine and let it simmer for 5-7 more minutes. Add fried tofu and stir for 3 more minutes. Remove to a serving clay pot. Sprinkle with black pepper and serve with rice.

Cải Thảo Nhồi Đậu

Tofu and Chicken rolls


1 block firm tofu
8 oz chicken meat, julienned
1 Napa cabbage
1 bunch spinach, cooked
1 cup chicken broth
fish sauce, salt, pepper to taste


In a mixing bowl, combine tofu, chicken, 1 T fish sauce, salt, sugar, pepper. Mix until the tofu mixture is smooth. Set aside.

Wash cabbage throroughly and drop the cabbage leaves in a medium pot of boiling salted water and cook for 1 minute. Remove the leaves.

Fill each leaf with 1 T of filling mixture by the stem end. Flatten the mixture with the back of the spoon, add 2-3 cooked spinach leaves on. Add more mixture if needed. Roll up the leaf to hold the filling.

Add chicken broth into a medium pot, add the rolls in, leap side down. Cover and simmer gently for 30 minutes.

Serve with rice and fish sauce or serve alone as an appetizer.

Đậu Rán Tẩm Hành

Fried tofu in onion sauce













1 block firm tofu
3 green onion, finely chopped
2 T fish sauce (or to taste)
6 T boiling water
1-2 T sugar (or to taste)
1/2 cup vegetable oil


Heat oil in a medium pan over medium heat.
Cut tofu into medium thin pieces.
Fry both sides until golden brown.

Disolve sugar in boiling water, add fish sauce and onion then microwave for 30 secs.

Soak the fried tofu into onion sauce then remove them quickly, sprinkle onion on top. Serve hot with white rice.

Đậu Phụ Ruốc Bông

Steamed Tofu with Dried Pork







1 block soft tofu
1 T dried shredded pork
5 green onion, finely chopped
1/2 T vegetable oil
salt and pepper to taste


Cut tofu in cubes or any shape you like. Steam for 5 minutes or microwave (wrapped) for 3 minutes. Remove excess liquid from tofu. Sprinkle with green onion, vegetable oil, salt, and pepper; microwave uncovered for 1 more minute. Top with dried shredded pork. Serve hot as an appertizer or a side dish along with flavored rice.

Đậu Phụ Nhồi

Stuffed Fried Tofu



1 block firm tofu
1/3 lb lean pork, minced
3 water chestnuts, minced
1 shallot, minced
2 small wooden ear mushroom, soaked and minced
1/2 ounce cellophane noodles , soaked and diced
cooking oil
salt and pepper to taste


Cut the tofu to any size and shape you want, slit it leaving 1/2" uncut edge.
Mix pork, water chestnut, shallot, mushroom, cellophane noodles in a bowl. Add salt and pepper to taste. Stuff the tofu with stuffing.
Heat oil in a pan over medium heat. Fry the stuffed tofu, turn all the sides to make sure it cook evenly.
